So . . . what do vegetarians eat, anyways?

If we don't eat meat, chicken, fish ( and in my case, eggs or dairy), what do we eat? And where do we get our protein?

Vegetarians actually have a more diverse diet than omnivores. When we cut out meat, here's what we add: grains, vegetables, mushrooms, fruits, nuts, beans. With these, we can cook infinite recipes including pizzas, lasanhas, quiches, pastas, pies, cakes, muffins, souflês, cookies . . . The list goes on and on!

Here's what I didn't add on my list: Salad! Because salad should already be a part of your diet... right?

This is how a balanced meal should look like. Half of your plate is made up of vegetables, preferably raw, like carrots, celery, lettuce or tomatoes. One quarter of your plate should be made up carbohydrates, like rice, pasta, or bread. The other quarter of your plate should be made up of a source of protein (and preferably also a source of iron-more on that later) like beans, lenitls, chick peas, quinoa, broccoli. For dessert, eat a fruit for vitamins.

For example: For breakfast you could eat an apple and some wholewheat bread with peanut butter. For lunch, you can have a green leafy salad with Pasta & Broccoli, and a banana on the side. For dinner, you can bake Mushroom & Leek quiche, accompanied by watercress and a plum.

The combinations are endless!
